This is a special kaiseki meal that includes not only the Three Great Delights of the Kaga and Noto Mountains and Sea, but also plenty of other blessings of the Earth.

Blackthroat Seaperch is noted as the prime delicacy of the Hokuriku region.
Once you try the fatty blackthroat seaperch, you will be hooked.
This supreme kaiseki meal includes a praiseworthy seasonal delicacy that you can only taste in that particular season, along with premium fruits.

Spring: Have you ever tasted pufferfish? Also known as fugu, the pufferfish is some of the best that have been caught in Noto, Japan. Also included are Akazaki strawberries, grown in Noto, within a Globally Important Agricultural Heritage System.
Summer: For crab-lovers! Horsehair crabs packed with plenty of meat, and Ruby Roman grapes, the highest quality variety in Japan
Fall: You must try these in the fall! Fragrant matsutake mushrooms and Shusei apples, a rare brand of apples produced in Ishikawa Prefecture
Winter: The best Noto Yellowtail, so fatty it doesn't even absorb soy sauce! Along with this, add on Yuwaku yuzu, a local specialty of Yuwaku

What's more, the Main Building and Annex each have 2 kitchens and 2 head chefs, so you can enjoy the food. Fastest kitchen-to-table dining and begin your meal as soon as it is made.
